Apple Josie

Enough apples to fill a pie plate
Biscuit dough to cover the top
2 tablespoons butter
Yolks of two eggs, beaten
1 cup powdered sugar
2 egg whites, stiffly beaten
4 tablespoons sugar

Pare and core the apples and put them over the heat, covered, to steam while making the biscuit dough. Spread the dough over the apples, and bake in a hot oven (400 degrees F) until the crust is brown. Turn out on a warm deep dish, crust side down. Sweeten slightly. Make a sauce of the butter, egg yolks, and sugar, beating all together and pouring over the pudding. Beat the egg whites until stiff with 2 tablespoons fo sugar and spread them over the mixture for meringue. Brown in the oven at 250 degrees F for about 15 minutes. Serves 6.
