Apple Gingerbread Cobbler
1 egg
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup buttermilk
1/4 cup molasses
1 cup flour
1/4 teaspoon salt
1/2 teaspoon soda
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon cinnamon
1 1/2 tablespoons butter
4 apples
1 tablespoon lemon juice
Core, pare, and slice the apples. Mix one half the sugar with the apples and place in a buttered baking dish, or in muffin tins. Sprinkle with the lemon juice and bake in a moderate oven (350 degrees F) for 20 minutes while the batter is being mixed. Beat the egg, add the remaining sugar, buttermilk, and molasses. Mix and sift the dry ingredients, and stir them into the liquid mixture. Add the melted butter, mix well, and pour over the hot apples. Replace in the oven and bake for 30 minutes in a moderate oven (350 degrees F) or until the cake shrinks from the pan. Serve with any preferred sauce. Serves 6.
